i work in a pub, this is just what we're told white wine kept in fridge, red kept under bar, all red wine must be taken up from cellar atleast an hour before use so it has time to warm up
room temperature for most red wines, chilled for white. with some exceptions.

rosé chilled. Only red wine i know of that can be servied slightly chilled is beaujoulais, all the rest should be served at room tempterature and be allowed some time to breathe before being served. You should also never really fill a glass more than 1/3 full, so you can swish the wine about in the glass, releasing the flavour and smells
