Theres a few points on soldering which should make it slightly better! 
you are quite right about the 2 different types of metals, the Copper of the cable and whatever solder you use, Silver and Tin i think it was they use nowadays, they also used Lead but thats a bit of a no no now!
Also it can be down to your technique on why you would get a dry joint. i take it you tin'd all the cables (when you do solder!)? thats what you need to do for a good joint, have both cables tinned, ie have both with some solder on before joining them together. simple as! but make sure the cables get hot enough.
oh and in the electrical world there is some waterproof heatshrink about, basically its a heat shrink with glue on the inside and just seals the joint.
Looms looks alot better thou mate.
