probably cos your too slow or havent lowered their shield enough
I too never played Halo 1 or 2. The single player mode gets boring towards the end but i didnt buy it for that.... online is quality!

sometimes its fine but other times i can shoot them in the head run over and hit melee then like a second later i die 
its like ive pressed it but they pressed it a second later

Maybe they have a faster connection or they are the host.
Best way to melee is in the back of the head, kills them in one hit, Try shooting them then jumping behind them or circling around them.. Works nicely.
But yeah, as someone said you probably havent lowered their shield enough.. Its all about timing.

It takes 3 melee hits to kill someone unless uve previously damaged their sheild.
Also whoever has host will have an advantage. Especialy in shotty snipes
