Right, I need too give access to a remote server (Either through RDC or VNC) but I don't entirely trust the person I'm giving access too.
All I need too protect is certain directories which should solve any trust issue, I'm assuming this is really easy.
Also remote administration password, how secure is this with access too everything apart from passworded directories?
Any other alternatives too give precise permissions too him?

If you're using RDC, just create a username specifically to log on with, and you can apply permissions to specific directories in the same way as any other Windows user. You can still stop Administrators getting access to certain folders if you specifically deny it IIRC.
