I've been gaming since I was about 7, I'm 26 now I wouldn't have a clue how many games I've completed except Forza Motorsport a couple of times and Forza 2 3 times, on my 4th now.

Top of my head...
All the 'Streets of Rage' games on MegaDrive
Banjo Kazooie on the N64 100% collected everything
Donkey Kong on the N64, same as above.
Fable on xbox
Advance Wars on DS
King Kong and Cars on xbox360
All 3 Halo games on legendary difficulty
I do have the 'Two Time' achievement on PURE on xbox360 too, thats one of the hardest achievement I've ever seen as its 90% luck/fluke.

Off top of my head;
Final fantasy, 7 a couple of times and 8
Zeldas, one for snes I've done quite a few times, game boy one, and the n64 one.
Mario kart snes version and n64
Goldeneye
fall out
Command and Conquers, nod vs gdi ones, red alert, red alert 2, generals,
dizzys on commadore 64, not sure if completed them or ended up getting stuck.
carmagedon 2,
twisted metal
destruction derby
Killer instinct
street fighter 2 turbo.
donkey kong 64
half life
Grand Theft auto 1 &2, liberty city, san andreas, vice city
first tombraider
super mario
Metal gear solid, one that came with ps2's when it was newish.
A few obscure ones on the snes that I can picture in my head but can't remember the names. Most hours as a kid were spent on champ managers, from the old days where you had to type in ms-dos to load it up through to 2008 football manager, stopped playing on that now though. Me and my best mate camped in his through summer.

Original Resident Evil on the PSX was the most satisfying to complete when I was about 13 as it was terrifying!

Character select screen music was awesome
That is actually one of my favourite fighting games of all time, alongside Soul Calibur on the Dreamcast.

Completed quite a few in my day but the one that really sticks in my mind as being a massive achievement was Xenon 2: Megablast on my old Atari ST, I dread to think how many hours I spent on that game as a kid
