Engine on and idling, turn the wheel full lock either side a few times, this will bleed the power steering system of any trapped air yes?

Yes, self bleeding system. On the XE's anyway.

I see. I want to try this on my Mondeo (yes I know), I get an annoying slight whining noise from near the power steering pump, trying to find out if the pump is dying, or something to do with the pulley. Belt is tensioned OK though. Blargh.

Aye, new Minis are terrible for it.
To be honest if it's got worse than what it was it sounds like the pump's on the way out unfortunately.

Thing is, it doesn't make any noise when the engine is cold, only seems to be after say 5 minutes of idling or driving that you can hear the whining (at idle).

Hm, only reason I can think why that is is because the fluid would be getting thinner due to being heated up. The pumps are usually lubricated by the fluid as well so possibly maybe backs up the idea that the pump's on the way out.

Very likely.
The fluid is probably black.
You need a helper, a big syringe, a gallon of ATF, a waste oil bucket and about half an hour.
