i have a 1.2 16v
what would be the easiest conversion to do
1.4 16v
1.6 16v
or x18xe1?

I'd imagine they'd all be quite similar levels of difficulty seeing as they are all small block! If you're going to go through the hassle, might as well go for the X18.

Depends what you can afford...
Remember that tax gonna be highier for 1.6 and 1.8, insurance probably aswell

the 1.8 will probably be cheaper to insure than a 1.6. and its the same tax as 1.6 aswell.
