Stripping back my inner arches and generally tidying my car up.
Is it worth painting them or just drowning them in underseal ?
Whats the best process to paint them ?

Id underseal, then gloss black hammerite or something.

I presume so or you could stone chip them (shultz)(like whats on bottoms of sills) then leave it to dry and paint over that. Thats probly the best bet, just mask up the rest of the car, gets everywhere

Just steady on the back then, not to get it on the quarter panels if you get some proper shultz, and a shultz gun, it comes out fast, and thick lol.

Superb, i'll probably mask the quarter off then, is this stuff you speak of expensive? take it i'll be able to get it at my local paint/bodyshop supplier?

i removed all the old underseal and covered them in krust and waited till they dried then, primed them, painted then undersealed the bits leaving the bits you see nice and clean
