Or it would look like the standard suzuki vitara i saw today with the wideboy wheels sticking out the arches like a sore thumb

I had 16" ET36 on my Corsa and it was pushing it a bit.

If it's on standard suspension you'll be find but it'll look ridiculous. Lowered it will take a bit of convincing.

you forget the all important bit, the width

i had 15x7 ET25 with 165/50 tyres on the front of my corsa, and it was low aswell

i had 15x8 ET13 on the rears but that required modified arches and lots of camber.

all depends on tyres and how low you want to go.
