snap day would of been better, but any of the nikon/canon/sony entry level dslr's cant be bought for around that price new, all of them are pretty much the same in essence just depends which one your fiance feels more comfortable handling.
if you dont mind going second hand which id possible advise as if they are into photography they may outgrow the entry level camera quite quick, then have a look on talkphotopraphy at the for sale section usually have quite a few cameras for sale on there.
also quick hint while looking for cameras the more numbers in the model number ie 1000d (canon) the more entry level the camera is and the fewer numbers the better.

Canon 40D is about that price I think.
I would go either canon or nikon but the cheaper nikons dont all autofocus on all lenses.

I got my Nikon D3000 for about £360 new at the beginning of the year, it's probably less now. As said, try and get one with as few numbers as possible for your budget. Although it does take a bit of research too, as the Nikon D50 could be had second hand in your budget, but it has actually been replaced by the D3000.
