The loom is quite different on the 1.0 12v and 1.2 16v.. Because the ECU isnt in the kick panel its in the bay bolted to the engine.
Your 12v is worth more and easier to sell than a 1.4/1.6 16v so why not sell it and buy a 1.4/1.6?

This is abit of a project car and getting the car cheap, car will be getting gutted anyway so changing interior loom isnt that much of a biggy tbh.

It still makes more sense to sell it and start with a 1.4/1.6..
If its clean you'll make some money back that you can put towards other parts.
Ripping out a perfectly good 12v and then fart arsing about to build a car that you can buy for peanuts really is a stupid idea.

Unless its already got a shed load of mods (Like shauns did).
A converted one will cost more to insure too.

Do you need to change interior loom for 1.0 to xe/let?

You could do the same with a baby xe, but there really is no point when its more work than fitting a proper dash loom.
All the conversion stuff has been posted above, Your also need to change the drive shafts too though.

It's easy to do it. Nearly every conversion I've done started off as 12v's and sxi's
