AFAIK If they dont take the CV2 number & Postcode they get no merchant protection

Theres very little merchant protection over the phone anyway, stuff like 3Dsecure and chip&pin are there to verify its the actual card holder - these systems are not 100% secure but chargebacks with phone orders vs chip&pin/3dsecure orders is totally different
