Strange request (or normal for me)...
Does anyone know if there are any cables/connectors in existence that convert as follows:
Separate internal SATA power + SATA data cables > one cable (for external use) > separate internal SATA power + data cables
The connectors would need to be circular, fairly chunky and easy to slot into each other (male > female style arrangement).

Look at PoeSATA/eSATAp as you might be able to separate the power again on the driver, otherwise you can get PoeSATA/eSATAp enclosures.

Yeah I thought of that, but the problem is the connectors need to be fairly chunky and in a male/female arrangement for docking purposes (lol)
Think of a games console where you had to slot in a cartridge into the console, that kind of thing.

Just use any connectors with enough terminals. Wouldn't be difficult to make them up.

What I'd ideally like is to use something like an IEC connection (i.e. kettle lead), but with more pins.

There are a handful of rugged sata connectors, designed for military/industrial applications but i can't say i've ever seen a rugged eSATAp cables.
What are you using it for? As there may be other solutions.
