What a load of wank. First off, you are in the middle, you don't know you're in the middle, so it has no relevance.
But to answer your question, you would peg the string to where you started, then using the compass, walk every direction and use the watch to time how long it took each try to get to the edge. Once you have covered all 360 degrees, the one that took the shortest time to get out would be the quickest way out of the field.
I would rather lose by a mile because i built my own car, than win by an inch because someone else built it for me.

Quickest way would be just run out the field, no point messing about with anything. Didn't ask for the shortest route, just the quickest way.
not much of a brainteaser if the answer is "I dunno just run lol"

If you're in the middle then there are at least two solutions.
If you want to leave by the quickest exit but not get there the quickest, peg the string and walk perpendicular to it, releasing a fist of string every step.

Is this in ratio to body size?

You wake up in the middle of a field, you have no idea where you are and the stuff growing in the field is too high to see over (even if you jump) you have a watch, a compass and a ball of string.
How do you find the quickest way out of the field?
Is it day time or night time?
