As everyone will be getting this, i thought i'd answer a few questions before people ask..
The notification centre is available on whichever screen you're in, just pull down from the top and it appears from nowhere.
You can choose what you receive notifications about in the settings > notifications menu.
You can choose whether notifications display as an message box (like they do currently) or a banner at the top, in the notifications menu (see above) either touch the banner to go to the app in question, or look in notification centre
If you have several notifications queued on your lock screen, for example, an email, a whatsapp message, a text message, you can swipe to unlock on any one individually and you head straight to that app/message rather than unlocking and choosing.
iPod is now called Music ()
You can turn porn mode on safari in the settings > safari, menu
You can enable or disable photostream in the settings > iCloud menu
iMessage is built into the messages app
Not sure if this was on iOS 4, but in the weather app, you not only get weather on your current position, but you can tap the screen for an hourly forecast (2nd bit might be on iOS4)
Videos are no longer in the iPod, they are a separate app like on the iPad
You can turn the LED notifications on in the accessibility menu, but DO NOT DO THIS if you are epileptic

Music/Videos is like that on the Touch as well
good summary what do you mean by notifications can be shown as a banner as before but also as a thing at the top? just that? so yuo can keep notificatiosn the same as they are now effectively for a particualr app?

also, i take it then that they actually have enabled the camerra flash as the led light?? (presumably on the 4S too - the maniacs!)

yup, if you want emails to appear as a banner at the top of the screen, but want texts in an alert box, so they need acknowledging before you do anything else you can

Also I quite like the fact you can assign custom ringtones or text message alerts to each contact when you edit the contact.
Pinch to zoom in the camera plus you can use the + volume key to take a photo.
And when your on the lock screen if you double tap the home button it brings up your Music controls like play/pause, next track etc. and you have a camera button on the bottom right, so can take photos quickly.
Settings > General > Usage
Shows info. like your calls/data usage plus now shows your internal storage and whats taking up your space, shows each app individually and how much MB it is.
Plus shows your icloud storage too
I think ios5 is a good update.
Russ do you find the wifi sync to be quite slow though?

Ah ok, well now in Photos app, go to top right corner, click edit then Add on left side, and you can make new folders! Helps a bit if your a organisation freak like me
