Do the bread on one side, turn it over sliced mild chedder back under the grill, till it's starts to change colour.

I find mature too oily. Dam I haven't got any cheese.

+1

Cathedral City or Black Bomber cheese, dark brown, not burnt but not light then smother the top in Marmite and cheese, best cheese on toast ever.

Never sliced, always grated. Slicing is lazy

Any good bread
A good mature cheddar finely grated
Lea and perrins
Honey roast ham
More finely grated cheese
Lea and perrins
Untill the cheese starts to form little fat bubbles/circles.

Sometimes toast the bread first

I find the coveridge is better sliced, and it cooks more even. Also grated cheese makes a right mess, it all falls into the grill pan.

That's an occasional. My usual is Cathedral City on White. Gotta slice it - not grate. Toast on one side.

Warburtons toastie bread toasted one one side. Turn it over and butter the other side without toasting and put grated Cathedral City on it and toast until the cheese just starts to bubble. Stick HP BBQ sauce on it and consume
