Steve Jobs was paid $1 salary in 2011,2010,2009...
Tim cook was paid $900,000 in 2011, $800,000 in 2010 with a $5m bonus
He also received $377m of shares in 2011 to top up the $52m of shared he got in 2010

If I had a few mil in the bank, I would probably avoid paying more tax as well.

Think he had a $1 salary for absolutely ages too. Made his cash with Pixar and gained a lot of assets in the form of shares with Apple.

You probably get to a certain point, after your first billion perhaps, where you're just doing your job for a laugh.

Nothing really wrong with how Jobs paid himself - I do the same, £589/month salary and the rest as dividends.
Why pay more tax than you need to?
I suspect that he probably kept a lot of his money invested in the company anyway rather than taking it out as salary/dividends.
The man started off living in a big house with no furniture and just sat on the floor FFS

Earning stock is quite a good way of keeping you committed to the company too I guess. In their industry a slip could end up costing them big!

Don't you pay 10% (on £35k and below) on dividends?

You (well I) don't get taxed on dividends under £31.5k.
Company would have to pay some tax though (corporation tax) but it's not a lot.
Edit - technically it depends how you get paid - i.e just salary/ salary + dividends, or just dividends.
My accountant explained this all to me once but it went over my head TBH
I could always ask him in an email and copy + paste what he says

Just found this:
http://www.direct.gov.uk/en/MoneyTaxAndBenefits/Taxes/TaxOnSavingsAndInvestments/DG_4016453
"If you pay tax at or below the basic rate
You have no tax to pay on your dividend income because the tax liability is 10 per cent - the same amount as the tax credit"
Technically I don't pay any income tax so I've no dividend tax up to the £31k...

YOU still pay 10% on dividends, but its a tax credit and you dont even see it
edit to say the £31k you allude to + the salary you have takes you to the c.£38k upper earnign limit at which point you start paying higher rate tax and thus, in your case, the dividend tax crediot goes up to 32.5% (may be an oput of date rate) of which effectively you only pay 22.5%
