try the socket hammered on then with a power bar/steel tube for leverage or failing that some mole grips beasted on and a hammer. get a new bolt and copper sealing ring first though m8.

Yeh my dad tried the metal pole leverage idea but still no joy. Think we are gonna try a smaller socket/spanner and then see what happens. Its a real pain the arse

I think i already have new bolts. If not where can i pick new ones up from?

try heating the bolt slightly (not too much or it may melt the hose)

The best and easiest thing to do m8 is cut the flexy pipe on both sides then just pull the calipers off, replace them with a braided brake line kit not that expensive and its a straight swap for your old ones.
Job Done.
Oh buy the kit BEFORE you go ahead with this.

Yup, as I said ^. Silly question but you are trying to undo the bolts whilst the calipers are still mounted arent you as I tried doing them once i'd took the calipers off and its a pain cos you cant hold the caliper to get enough leverage unless they are still bolted to the hubs. I'd go with getting new flex-hoses, be it rubber or braided...
