There used to be a native plex app for ATV, from what I understand a software update from Apple prevented the app from showing on the main menu

FYI the exploits used in the iOS7 JB can't be used on the ATV, it's also 10x harder to do as the surface area for attack is so small.

That's exactly right. My problem is I am not in the same room as the tv so I can't see my music lists. Therefore I needed the app working on my iPad.
I have gone a different way with it now. I've set up a Remote Desktop using splashtop so I can control my PC with my iPad when sat outside. I just stream to Apple TV from there and it's all good. Also gives me volume control which the remote app does not have.

Sounds like Home Sharing is the perfect fit - WAY easier.
Enable Home Sharing on iTunes
Launch Music App - Select More - Shared. Select your iTunes Library.
You can now browser your music and play anything you want including via airplay

I found that article too. Mine has the bar at the bottom with composers etc but doesn't have the "more" tab. I have it on my phone music app but not on my iPad for some reason.

Have you signed into HomeSharing on the iPad? Go into the settings for the music app and check.
I've just looked on ours and it also doesn't show the "more" button until I start iTunes - then it detects the HomeSharing and changes the last tab to more and the 2nd option is the Shared Libraries
