I dont particularly have any specific healthy recipes as such, I just tend to make sure I make enough meat for there to be some left over for the next couple of days. Unless you chuck loads of crap into it, most slow cooker meals are going to be very healthy anyway.

FFS. I prepared a veggie curry last night, not a big one as it was to go with a main curry. I used 300ml of water and chopped/diced veg and half a can of chick peas. I thought it would be ok on low.
Came home to charred chick peas

Can of chick peas
Tomato in to 1/8's
1 diced carrot
1 onion diced
1 Potato diced
2 x garlic cloves
2 x veg stock
Creamed coconut
Chilli powder
Paprika

I made it up. I generally Google for the jist of it.

To be honest, for the pulled pork I got the idea from Man v Food! Once it was cooked I shreaded and put back in with mayo then put in tortilla wraps.
Really nice.

I had this the other week....
Sausages, onions, Schwartz slow cook sausage casserole powder, 2x tins of baked beans, leek, handful of red kidney beans.....
Sealed it all off in a pan then through in slow cooker for 8 hours....
was FIT!!

Was just an experiment, normal service was resumed with a joint of pork recently 
Slow cookers were made for cooking pork Might re name it a Pork Cooker
