There are a few ways to do that. It really depends on the colour of the car to begin with. Some are easier than others.
With the volvo, what you want to do is cut out all the bodywork, so you're left with something like this...
Then, go to Image > Adjustment > Levels, and drag the middle node (the small grey blob) towards the left hand side untill you're happy with the colour. You can play with the other two to fine tune it, but you probably won't need to do much.
Depending on the environment the car is in, the white will have a little hint of colour too it, maybe blue if its by the sea, or yellow or red if the sun is setting.
You can add this by clicking Image > Adjustment > Colour Balance and them playing about the with sliders.

Mine's very much of a WIP at the moment:
My mouse has decided to not let the left mouse button stay held down, so its making any brushing near impossible. Can't really do anything TBH.
Think this is the sort of style I'm going for. Will need to tidy it up quite a bit though

I filled in the bottom vent wanting to put a intercooler there so it's fully on show and not in a vent. but i couldn't do it for shit.
