Medium, left to sit for a while before eating.

Really lucky living in Colchester, got the Bella Pais here which I reckon is in the top 5 or 10 places in the country for a steak (without trying many others). But this place is incredible

Yep. Which is what I said. if its a genuine problem or poor standard of service thats fine. But you get alot of people taking the piss too.

Anyways, if a steak comes with a sauce it should be on a hot plate...nothing worse than conjealed pepper sauce which has gone cold. I ask for a hot plate anyway and some places admit they wont serve it on a hot plate unless specifically asked. No idea why

That's because it's a common misconception 'well done' means slapped on a grill at full heat and then slung on a plate and given out.

As long as it's treated properly it will taste as good. Only a poor chef will ruin a piece of steak that is supposed to be well done.

Indeed. To my mind, 'well done' is simply cooked through. Slowly and thoroughly.

I love braised steak for example. All this soggy, pink looking underdone stuff is fine on a fanny, but on dinner it turns me right over. The sight of it almost makes me want to honk.

I have mine anywhere from medium upwards. The first picture posted (with the 'strawberry jam' ) is about as far as I would go.

Also, I'm not posh enough to go for anything other than rump

As long as it's got chips, onion rings, an egg and some barbecue sauce with it I'm happy!

I'd agree with this to an extent.

However, can also see the appeal of a rare steak, i just don't like the texture of of it cooked to that level, medium would be as low as i would go. If i went to a really good place for steak i may change my mind but having said that a good place for steak should also be able to a steak medium/well to the same standard.

at that point i'd simply leave without paying. you may not agree with his complaint but thats the customer, without them the chef's out of a job and no ones getting paid.
