OR regardless of what car you buy in most cases there will always be a better model so technically most people have purchased a lesser model is what is being said?

The only people who say people who drive boxsters only do because they cant afford a 911 are split into two groups:
People who have never driven a Boxster
People who cant even afford a Boxster let alone a 911

exactly, if you were a young female and wanted a reasonably priced, well made german convertible then a boxter is probably perfect, does not mean she only got it because she couldnt afford a 911 turbo or gt3

i'd go about it differently.
If i couldnt afford a car I wouldnt buy a lower model of a car I want... i'd buy an older model
A 308 may be cheaper but IMO they are just nicer than the 348's.
I dont really like the mid 80's wedges.

I'm not saying the 'lower end' cars are crap and I'm not saying there aren't reason's for owning them - I'm just saying most people would 'prefer' the higher end model, but realistically (usually due to financial reasons) can't get it.

Is the 10k rental idea not a good one?
Driving things like 430s, california, lambo lp560, aston DBS and an r8, 25 times a year sounds much more appealing than the cost of a couple of services a year etc.

we're talking about buying a car for performance / fun reasons solely, not to be a daily driver / other 'reasons'.
yeah i know it's a bit poverty spec compared to what else has been said but it still shows that your point of buying only what you can afford to is wrong.
some people just prefer lower spec cars, whether they use it just to commute and don't want expensive bumpers/colour coded bits on or whether they want the engine rather than care about how powerful/luxurious a car is.

I bought the top of the range, fastest, bestest, gayest Mini instead of a Mini One. If you are going to do it, do it properly
TBF it's the only car I have had that has been the best one. My Audi A3 wasn't an S3, I could afford to buy an S3 but it was too expensive to run.
