Man of men. I'm always unsure of ordering blue as many chefs fuck it up and it's cold in the middle

That picture on the previous page makes my mouth feel all dry.

I don't even get the point of treating meat that way!?

On the subject, the only place on our England trip where I had a decent piece of bacon, that wasn't burned to a crisp, was a lovely little pub in Cleckheaton.

We send our best cuts of bacon your way and that's how you treat it? If you want something crunchy go buy a bag of crisps, meat is supposed to be tender and juicy!

[/bacon rant]

Granted, I could find more use for crispy bacon than crispy steak, but tender meat just always packs so much more taste.

Indeed. Stretch the old belly a bit first Eck

It'll shrink otherwise and you'll be chowing like a bulimic humming bird.

Smoked, I'd say. Tends to have more taste than if it's just salt cured.

That said, the French and Italians make salted bacon (ventreche and panchetta) from pork belly and it tends to hold a lot more taste than our Danish bacon cut from the back.
Though a lot fatter, I'll always prefer panchetta to traditional bacon.
