Which 12" sub should i buy? Wanting a one sub setup but high power. or any other subs that might do. Or anything the would make the Alpine typeR look silly in terms of depth and volume.

Volume and sound wise i think the RE will be best of the bunch.

The JL is also very good, but more common and doesnt have quite the output of the RE, although u cudnt go wrong with one!
Kicker i dont rate tbh, never really heard one i like, and Digital Designs are an unknown entity to me, never heard one.
So for me the order is

Re - JL - DD - Kicker.

The HC is a bigger brother, SX is dual 4 ohm, so needs 600w rms + at 2 ohm.

HCis dual 2 ohm, so needs 1200w rms + at 1 ohm

so really u wanna be looking at a 750w rms at 2 ohm amp for the SE, or a 1500w rms at 1 ohm amp for the HC.

XXX is available in multiple configsof coils, even quad coils...

its rated at 1600w rms, so the 1500w amp would do, be better nearer 2k rms tho...

up to you, 2 SE probably better than a single HC and same power requirement, depends on if u want one or 2 and how much u wanna spend.
Dont see u being disappointed with RE tho.

HCis basically the old model its a bit more brutal, but 2 SE would be good. Cant go wrong with either tho.
