Depends what parts you are going to paint? For Primer on body pannels (not plastic) you want to sand with 320 wet, never any grade above since it has no grip
After primer you can smooth with 800 wet. If its plastic you can use around 400 as long as you use the proper clear plastic primer as it dose'nt depend as much on grip as the primer bonds to the plastic.

Bumpers and sideskirts and a bonnet so I can spray them and fit them

You going to be using rattle cans for paint? For a large area like a bumper and especially a bonnet it would be best to buy or rent some spraying equipment. All you would need is a compressor and gun and have a go. Will probably cost less than millions of cans of paint and you'd have a better chance of getting it good.
