looked at engine today with it running, the header tank looked empty, couldnt see any water flowing back into it either
stopped the car, looked again and all the water was back in it, does this mean my thermostat (sp?) isnt opening or something??

Thats isnt it. You sure the water level is correct (not low)? If the thermostat doesnt open then that means th water has less distance to travel, so really that should keep the header tank level higher if anything. Could be stuck open but if you can runs at a normal temp on long drives then it unlikely.
Also, if your thermostat doesnt open your engine will overheat (it will go into the red, even on motorway driving).

oh my bad, ummm, any other ideas? the temp dont go into the red, the water level is fine but when engines running its empty lol when i turn it off all the water goes back into the header tank then!
