Ive just been to Asda and bought 8 chicken breasts and 2 bags of bron rice
Question is how much chicken ( in Grms ) should I be cooking for tomorrows meals ( 2 ) at work?
and how much rice

How much do you weigh matt?
You're probably not as heavy as me so 150g chicken would suffice. Bearing in mind 100g of chicken has at least 22g or protein.
personally i aim for around 50g of protein per meal.

generally better for you I think
Slower digesting to, makes you feel fuller for longer, releases energy slower???

brown rice is white rice without the husk i thought, no better for you surely? maybe slower to digest

Nup, if you remove the husk from a grain of rice you get brown rice. If you remove the bran layer you get white and that's where the nutrional value is lost.
