Don't send anything unless you see money in paypal, or it says in your paypal that the funds are being held until you post the item. If you see it either in your paypal or pending in your paypal you're fine. Have a read of eBay charges though, as it's fucking extortionate now.

I find foreign buyers who dont readlistings and bid and win items are the top annoyance

Yeah, if you don't want to post abroad clearly state it as people tend not to read. Also, check who is bidding on your items, check for negative feedback and location.

list sunday to sunday, or thursday 10 day auction to cover 2 weekends.

if you dont want to sell to people abroad, change your preferences to block bids from people outside uk. i sell stuff every week and never had any problems. the buy it now fees are steep (nearly 10% of final value fee) so selling as an auction(5%) is better.
