Recently got a Samsung Tocco Ultra and at first I couldnt get used to texting on it as it was so different to my previous sony ericsson phones, so now I have kindo fucked up the T9 dictionary Is there any way to reset this, as for example if I go to text "you're" it puts it in as "You.re" and when I go to add words to try put the right one back in it doesnt offer the ' in the punctuation

Dont know Samsungs at all, but I suppose the mobile phone equivalent of a PC format would be factory settings?

For texting, yep! Phone is pretty good though.

Every samsung is terrible at texting and poor battery life, but I still have a samsung and I dont know why

I have a 8510i and it's fine. 
Although it is very similar to a N95 running Symbian software.
