I've an SBS 2008 server i can bung the backups onto as it has plenty of disk space.
What software are people using to create these backups?

No need to use any fancy smancy software Andrew, just take the image off the disc, and zip it up, whack it on your server and forget about it untill needbe. It's something you can just do whilst doing other shit, just leave it running in the background.
How come you've got a server now anyway bud?
