Phal is where it's at! Is a madras supposed to be hot or medium?

I always have madras and find they can vary greatly. Had a really hot one recently so i asked the guy who worked there why it was so hot as i like them hot but this one i was sweating and struggled to eat it. Anyway he was saying it depends on what region they are from. He said mort are bengali and cater for the western culture, the one i was at was indian, who have far more spices in.

I like a hot curry but I also like a Spiced curry - as in not blow your head off hot, but full of flavour. I love Tawa for that, its got enough heat but so much flavour

I like the way Jalfrazi varies in heat from the different places, some places it's too hot others it's not that bad at all.
