I have been told that everything in my phone is apparently backed up somewhere on the net? If this is the case, how do I access it?

Is that not only the case if you signed up for such a service such as carphone warehouses "My Hub"

Contacts will be synced, that's about it, certainly won't have backed everything up unless you have a service that provides it.

thats not true, unless its rooted and you specify for things to be put on the sd card programs are automatically stored on the phone memory.
if you sync with google your mail and contacts will be saved online, other than that nothing will be unless you set it to be.
their are programs that backup your data though like appmonster and program2sd ect ect
