Is it the clay bar that makes the bodywork nice and smooth, and not feel rough? And when do you use it - before or after you polish the car (obviously the car would have been washed first lol)?

use it to prep the surface before polishing

Yep...you should do initial wash, then clay it, then wash again, then polish, wax etc.

Wash > De-tar > CLAY > Polish > Wax.

It pulls bonded contaminants from the paintwork leaving it feel smooth yes.

Yeh, clay can remove it but can also mark the paint if there's a large amount of it.

Better to remove as much tar as possible with a dedicated tar remover first (Autoglym Intensive Tar Remover is a good example of an off the shelf one that works)

Ahh OK.

What would you recommend Rich product wise? I don't mind buying it online or whatever but don't want to spend a fortune on the stuff as the paintwork on our cars isn't that great anyway TBH but obviously don't want to spend money on cheap crappy products at the same time LOL

I can't remember what shampoo we have, I think it's Turtle Wax something or other, also got a bottle of Autoglym Super Resin Polish and Paint Renovator kicking around if that helps.

I did consider asking you to come up and valet our cars but you are based like a million miles away from us!
