sent to get my plate off, going to get the car MOT'd saturday but documents not back yet . do i MOT on the current plate or the plate it will go back to?
Presumably its the current plate but when it reverts to its old one the most recent MOT will state the private reg....

You will mot it on the reg that's on it now, and once all the stuff comes back from dvla they will send you a new mot

Where did you get the forms from to remove the private plate?

It doesn't matter any more as the MOT certificate is just a receipt.. Not like the old days.
