But don't forget, the G5 is a Dual Processor computer yeah? So more than likely Apple would of compared results to a similiar spec SINGLE Processor unit, or the most powerful single CPU at the time, in which case the apple would have the advantage being able to multitask more efficiently by sharing load over both CPU's.
Now I'd like to see just how it performs against, say, a Dual Xeon or AMD MP System!

a good comparison would be the G5, AMD Operation 64 and a intel Itanium 2

AMD Opteron would win IMO, as the 32bit support is much better than the G5 & Itanium 2.
But how many OS's do you know of which utilise 64bits other than specific Unix builds with 64bit support in the Kernel & Windows Server 2003?? Not only that but there are hardly any programs written specifically for 64bit CPU's yet
