yeah one with three would do fine just make sure you put the live and the neg next to each other on the switch and leave the other one bare or ground it...

u trying to get his neons blown up or what??
3 prong switches can have 2 different wiring schemes.
1. Illuminated or non illuminated switch that requires a positive feed and a ground, with one prong spare for the switched output which you connect to your neon.
2.Non illuminated switch that has one prong for the supply and two prongs for the output.

all you want is a SPST toggle switch to turn it on and off.

On your shopping list you want:
Quite a few metres of 20a cable (17a should be fine if you cant source 20a but do try)
A single pole single throw switch (SPST)
A 20A automotive relay.
Inline fuse holder rated 20a or greater.

What does the relay actually do?

basically instead of buying a powerful switch to handle all the current, you can just use a normal switch to activate the relay which can supply more current.

can you get hold of the switches like the fog light switch from vauxhall so it fits in with the car?

Yeah you just go to a scrappie or to vaux themselves.
