1. You could get escort/sierra ect cossies not just the escort rally car

You must be able to do something like that? else how are there so many vids people have uploaded like on Gtplanet of them driving through the game ? 
I know you can record your replay to VHS (If your running through the socket on the back of the VCR) ... So if you are able to get the game to show up through your computer monitor, I'd guess you could use capturing software to record your replay? or maybe there is an easier way?

yeh but as far as I'm aware, all the save files contain are instruction on car's position / orientation / speed / gear/ etc... (rather than image style video) as it's smaller to store. Then when you re-watch a replay, they're actually Racing again! but just repeating all the actions you did before, this also has the advantage that you can choose a different angle to view from etc.
Has the downside its not actual video, so you can't copy it to pc.

Video is probably done with the PS2 plugged in to a TV card. VCR wouldn't be great quality.
Save files are track data, yes.
