I used to be well into this a few years back but then kind of got side-tracked
I basically need a portfolio of stuff but I've got no idea whats worth putting in it? I've built forums/e-commerce applications but isn't that a bit old-hat now?
Any ideas?

Well ecommerce applications will never be old hat. Online shopping is growing and growing.
When you say you need a portfolio of sites? Do you means sites that you have already built? Or you are going to build some for your portfolio?

My intention was to build stuff to specifically show what I can do, if that makes sense? All I'm doing is trying to expand my job prospects when I leave Uni

Good idea, perhaps approach some small companies offering free/cheap web design.
