I have a favourite in the list but I'm interested to see what everyone else would choose.
I've tried insurance quotes on all the cars listed! They are as follows:
- Peugeot 106 GTi - £810
- Citroen Saxo VTS - £1020
- Peugeot 206 Grand Tourisme - £1123
- Peugeot 306 GTi-6 - £1092
- VW Polo GTi - £911

My Corsa would be a good shout 
But from your list, i'd go for the 306 GTi-6.

I test drove a phase 2 Clio 172 and I loved it, but the insurance quote was £1600+

I've seen them go for as cheap as £2800..that might cover the insurance difference :-s

I have thought of that but using say £500 out of my loan to pay for insurance seems a waste of money!

Fiesta Zetec S. Still really like them for some reason make sure the engine has been looked after though.
