Not really, because the "seal" between the two is broken, so both should be contaminated?

Yes it possible mate.
When a head gasket go's water gets into you oil system, so you header tank will have non of very little oil in it at all.
Can work otherway around.
Oil in the water normaly means head fault on vauxhalls, oils gets into the water system threw a crack in head, oilcooler etc so oil in headertank but no water in your sump.
