looks pretty simple to use / setup that os commerce... how does it handle payments tho? surely it needs some secure method of confirming the payment like with a bank?

tbh, setting up your own shop is very long winded these days.
Look at bigcartel.com
sign up for £10 a month and get yourname.bigcartel.com
just forward your domain to the above address and you get your own domain with a very nice shop. my partner has her shop http://piratekisses.bigcartel.com with them.

setting up OS commerce is quite simple, but you need some basic knowledge of permissions etc, to secure it.
If you want to customise it then you really do need to know what you are doing.
