When you go to transfer the private plate off the car you tell the DVLA you have nothing to replace it with and they will assign a plate (either the original, or a plate of the same age).
Bigger problem is selling a private plate as most are so individual they are actually worthless.

V778/1 form to put the registration on retention (ie. off a car but still in your possession). Costs £25 retention fee plus £80 assignment fee - ie. the cost to put it back on another car you pay at the time you take it off. £105 total.
When you do this the car will be given a plate of the same age or in my experience the plate that it had before the private reg was assigned to it.
When you sell the plate, you'll also probably need a change of nominee which is basically another £25 to change the name of the person on the retention form so that you may assign it to their vehicle for them.
