Can you swap an exhaust manifold with out taking the engine out and also without it being on a ramp as im gona attemp it but only have a trolly jack to work with! Would it be better getting a garage to do it on a ramp or can it be done at home?

jack it up on some axlestands mate and it will be fine. You should have plenty of room then
