I have a quick question regarding hosting etc.
I have a hosting package from PAYH where I can host unlimited domains with reasonable usage & storage (gigs and gigs).
If a friend was to transfer his website from his current host to my host, I was wondering how the email would work.
Would I be forced to replicate what ever mailboxes he currently has setup, or is there any easy way this can be done?
Is it likely his mailboxes are setup with his website host or his ISP provider? Or could it be either?

You could change the MX record on the domain to point back to the server providing his email service at the moment. They're probably set up with the current provider, and would likely stop if he stopped his hosting with them though.
