Just editing some photos ive taken today. Ive noticed that when i save images and view them outside ps they always look less saturated and lighter in tone, is there anyway I can fix this?

View -> Proof Setup -> Mac/Win RGB
That will give you what it should look like onscreen. Chances are your set up on Working CMYK which is used for proofing work for print.

If you compress it too much in CS3 to save as a jpeg (typically 60% or more) then you lose a lot of contrast and saturation i've noticed.
