Whats the difference between the two, Which is more accurate etc.

A rolling road is a dyno, unless you mean engine dyno or straight to hub dyno?

rolling road calculates wheel torque/hp and works out flywheel torque/hp through usually working out drivetrain loses and adding that onto the wheel torque/hp.
engine dyno is the most accurate as it is bolted straight onto the dyno so no losses to work out, the losses are worked out by a maths sum or coasting down in gear, which isn't "that" accurate.

So will both tell me the exact bhp of the car and how much torque their is(not too much worried about how much power at the flywheel, it will obviously be higher, a few mates told me that a few places that do this tell you the bigger figure(flywheel) to make your car feel quicker than it is.

I also want to know if im losing any power and where im losing it from.

well the bhp given to a new car is a flywheel number so you need to know the flywheel figure to see if it has decreased or in creased form what it was said to be kicking out new if that makes sence.

My fuel seems to be getting used up more than usual?

heavy right foot maybe? more weight in the car? tyre pressures? spings and shocks ok? fuel filter?air filter?wet weather? could be any of these and i shure ive forgot a fair few aswell
