When I zoom in really far and select just one pixel and erase it, it also reduces the opacity to the surrounding pixels to like 50% too. I just want that one single pixel gone, is it possible? At the moment I have to do the edit in MS Paint and then paste it back into Photoshop.

Anyone know?

have you checked that the erases brush shape you are using doesn't have a soft edge? hardness 100%

Change the 'mode' to block or pencil rather than brush. Just to the right of where you adjust the eraser brush size
