I'm on Outlook 2003 and use it for this.
You just use the Calendar part of it, its fairly self explanatory. You can do things like polls and send invites to people for meetings that they can respond to by clicking the Accept, Decline or Tentative button. Then you have a list automatically generated of who is attending and who isn't.
It works for what I use it for.

I use the Exchange stuff in Outlook, syncs with my iPhone which would be useful if I actually remembered to update it

I use my google calendar for absolutely everything, it syncs with my blackberry too over the Internet so I have all my appointments.
