So I have a cat back system and it's really loud and deep what noise difference will a de cat make ?

Louder and more raspy unless you buy a silenced decat which wont rasp much at all.

Dependson the whole system, some do some dont. Mine is a fully silenced scorpion ss system and mine pops when the SAI pump is running when its cold. When its warm it doesnt.
